Streusel-layered Coffeecake

Streusel Mixture


1/2 cup light brown sugar, firmly packed 1 tsp. cinnamon
2 Tbsp. soft butter 1/2 cup walnuts, toasted and chopped
2 Tbsp. flour  

Preheat oven to 375°F. Grease 8" x 8" x 2" baking pan or 9" x 1-1/2" layer cake pan. Make Streusel Mixture.

Batter


1-1/2 c. flour 3/4 cup granulated sugar
2-1/2 tsp. baking powder 1/3 cup butter, melted
1/2 tsp. salt 1/2 cup milk
1 egg 1 tsp. vanilla

Make Batter. Sift flour with baking powder and salt. In medium bowl, beat egg until frothy. Beat in sugar and butter until well combined. Add milk and vanilla. With wooden spoon, stir in flour mixture until well combined. Turn half of batter into prepared pan. Sprinkle evenly with 1/2 Streusel Mixture. Repeat. Bake 23 to 30 minutes.
